Brie & Fig Bites

On Sunday night J and I sat down to watch the premier of Billions, the new show on Showtime. We were basically hooked once we realized Damian Lewis was starring, we’ve been DL fans since the first season of Homeland! To make this night more fun, we decided to invite another couple friends of ours to join us and host a little viewing party. J made delicious pizza cups (crescent rolls in a muffin tin, filled with marinara sauce, cheese and your choice of toppings) we served wine, cheese, chocolates and my contribution was my Brie & Fig Bites.

The idea behind the Brie & Fig Bites were developed over the Christmas holiday. Normally, my love for Brie & Fig take shape in puff pastry which I shared with you in December while hosting a Moms Night In.  This is actually delicious but it really required you to have a plate and sit down and enjoy with additional bread or crackers. What I love about the Bites is that they are simply that, bite size pieces of that same yummy flavor.

The other reason why I have started to prefer the bites is the simplicity of the recipe. Four simple ingredients and they came be made a head of time and thrown into the over when your guests arrive.

Oh yes my friends, just add nutmeg and these four simple ingredients create something wonderful.

Slice up the brie and put a small amount in each cup. Careful not to overfill them, we still have to add the fig!

Dollop on your fig spread. I use a 1/8 measuring spoon to avoid overfilling the cups. You want to have a beautiful balance of the brie and fig. Pop these babies into the over at 350 for 10 minutes.

Take them out, cool slightly (no one wants to burn themselves on molten lava fig spread), sprinkle with nutmeg, set out on a serving platter and enjoy!

How easy is that? Simple right? In 15 minutes max you can have a yummy and delicious appetizer to wow your guests. Not a fig fan? Totally fine, adjust to any jam flavor. On our Christmas vacation, my aunt purchased a spicy cranberry chutney and it went beautifully in these cups.
